I have a soft spot for all kinds of legumes, but Japanese tiger bean is definitely one of my bests.
Japanese Tiger bean is produced mainly in the northern island of Japan called Hokkaido. It’s not that common compared to other popular legumes like soybeans and chickpeas: most Japanese people probably don’t even know the name.
When cooked, Japanese tiger beans get nice and tender quickly. It’s creamy texture and hearty taste are just out of the world…! On top of that I find the tigerish pattern really cute:)
This time I used organic tiger beans from my favorite local market in my hometown.
